Making the right dough?


It has been an eventful time in the restaurant and bar sector recently and not least because of the smoking ban, the full effects of which remain to be seen. But in this turbulent time, what effect have these changes had on the pay of those in the industry? Experts from top recruiter Berkeley Scott analysed their extensive database to produce some industry wage trends.

Market Review

There is no doubt that the smoking ban has affected the pub and bar industry and the government's ongoing focus on binge drinking will continue to dominate this sector for the foreseeable future. In most cases this has meant that operators are looking at their consumer offers, focusing on improving locations, outdoor areas and menus. Those that adapt and actively attract new markets through their doors should see this pay off, whilst others who do not change may endure difficult times ahead.
These issues and the more recent uncertainty in the economy has caused some nervousness across the sector and resulted in the halting of some expansion plans. On the whole however many bar and restaurant chains are still continuing with their roll out schedules nationally.
Great candidates are still in high demand although many are not actively job hunting and we have found that candidate registrations onto job boards have dipped slightly. Those that are still looking are certainly being more selective in their applications.
With the emphasis on great food offers from most operators, experienced food-led managers are very sought after, particularly those who have worked with good quality and locally sourced produce. With many brands opening new sites across the UK, many of which have historically been London and south-east focused, job seekers who are flexible on relocation will find exciting job opportunities are plentiful.
